Coconut Rice Porridge with Blueberries
This delicate and creamy rice porridge is perfect for a calm start to the day or as a safe and satisfying snack. The combination of basmati rice and coconut milk creates a naturally sweet flavor without the need to add a lot of sugar, while fresh blueberries add freshness and antioxidants. Rinse the basmati rice thoroughly under cold running water until the water runs clear. This will remove excess starch and prevent the porridge from becoming too sticky.

In a small saucepan, combine the rinsed rice, coconut milk, water, and a pinch of salt.

Bring the mixture to a boil, then immediately reduce the heat to minimum. Cover the saucepan with a lid and cook for about 15-20 minutes, stirring occasionally (to prevent the rice from sticking to the bottom), until the rice is tender and has absorbed most of the liquid.

If the porridge seems too thick, add a little more water or coconut milk and stir.

Remove the saucepan from the heat. Stir in the maple syrup (or rice syrup if you are very sensitive).
