Putrescine is a biogenic amine that is formed during the decarboxylation of the amino acid ornithine, often as a product of bacterial protein breakdown. In the context of histamine intolerance, putrescine, like other biogenic amines (e.g. cadaverine), can contribute to the overall burden of the organism and worsen symptoms. Its presence in food is associated with fermentation and ripening processes.
