Enzyme

Substances that reduce the activity of the DAO enzyme, which worsens the breakdown of histamine.

DAO blockers are substances that inhibit (block) the activity of the enzyme diamine oxidase (DAO). This enzyme is key to breaking down histamine taken from food. If DAO activity is reduced by blockers, histamine accumulates in the body, which can lead to symptoms of histamine intolerance.
