Cod is a white fish with a naturally low histidine content. If it is fresh or frozen immediately after being caught, it is one of the better choices of fish on a histamine diet. (Maintz & Novak, 2007)

High-protein decay risk: For rapidly perishable high-protein foods, storage and repeated reheating can increase histamine load, and reheating does not destroy the histamine formed.
