Homemade Spelt Rolls Without Yeast
Fluffy, crispy homemade rolls made from spelt flour without using yeast. Thanks to phosphate-free baking powder and fresh quark (curd cheese), they are ready in a flash and gentle on your digestion.

Preheat the oven to 180°C and line a baking sheet with parchment paper.

In a large bowl, mix spelt flour, phosphate-free baking powder, salt, and caraway seeds if desired.

Add quark (curd cheese) and olive oil to the dry ingredients. Work by hand or with a wooden spoon into a smooth, slightly sticky dough. If the dough is too dry, add 1 to 2 tablespoons of water.

Divide the dough into 4 equal parts and shape into loaves or rolls with wet hands.

Place the rolls on the baking sheet, lightly brush with a drop of water, and sprinkle with seeds.

Bake in the preheated oven for approximately 20–25 minutes until golden brown.

After baking, let cool completely on a wire rack. If you have HIT, it is best to consume them fresh.
